Question
Can a cake pop's sugar content be meaningfully reduced without customers noticing a difference in moisture, texture, or how sweet it tastes?
Hypothesis
We hypothesized that a naive sugar cut would fail, because sugar in baked goods does more than sweeten - it holds moisture, drives browning, and softens texture. We hypothesized instead that a compensated approach, replacing part of the sugar with fiber to hold moisture and a small increase in fat, could cut sugar by roughly 30% without a perceptible difference in moisture, texture, or sweetness.
Method
We drew on two lines of published research. A 2019 review in Trends in Food Science & Technology on sugar-reduction strategies in bakery products found that removing sugar outright degrades moisture retention and crumb structure, while fiber and fruit-puree substitutes can partially replicate sugar's non-sweetening functional roles. A study in Food Chemistry on green banana puree as a fat and sugar replacer in baked goods found puree could replace up to 30% of sugar while maintaining moisture, thanks to its resistant starch content. A 2025 study on coconut fiber as a sugar-reduction aid in confections informed our fiber ratio. Internally, we baked four cake pop formulas and blind-tested them with 30 tasters rating moisture, sweetness, and whether they would eat it again: (1) original recipe, (2) a naive 30% sugar cut with no compensation, (3) 30% cut compensated with banana puree, (4) 30% cut compensated with coconut fiber plus a small fat increase.
Results
The original recipe scored a 4.6 out of 5 on moisture, with 78% rating sweetness "just right" and 82% saying they would eat it again. The naive 30% cut collapsed on every measure: 2.8 out of 5 on moisture, only 61% rated sweetness acceptable, and just 34% would eat it again. The banana puree formula recovered most of the loss, 4.3 out of 5 moisture and 76% would eat again. The coconut fiber plus fat formula performed closest to the original: 4.5 out of 5 moisture, 74% rated sweetness "just right," and 79% would eat it again, all while cutting sugar by 27%.
What Failed
The naive 30% sugar-cut formula, with no compensation, was the clear failure. Tasters independently described it as "dry," "crumbly," and "chalky" without being told anything had changed. Removing sugar had quietly broken the moisture-retention and browning functions it was performing, not just the sweetness.
What We Learned
Sugar reduction in baked goods cannot be a simple subtraction. It has to be a substitution that replaces sugar's structural roles, moisture retention, browning, and tenderness, not just its sweetness. Fiber-based substitution outperformed fruit-puree substitution in our test, likely because coconut fiber holds water more efficiently per gram while adding less competing flavor.
What Changed at MOMS
Our cake pop recipe now uses the coconut-fiber-compensated formula, cutting added sugar by roughly 27% while keeping moisture and taste ratings within statistical noise of the original recipe.
