Question
In a shake built to a fixed calorie target, what does a date actually displace - and is the sweetness worth what leaves?
Hypothesis
We expected to convict dates on sugar. The published glycemic data argues otherwise, so our working guess was that the real cost would show up as a higher carbohydrate load offset by a meaningful fiber gain - dates paying for their sugar with fiber, and the ledger roughly balancing. What we did not expect was that the sugar would turn out to be the least interesting thing about them.
Method
Alkaabi and colleagues (Nutrition Journal, 2011) measured the glycemic index of five date varieties in 13 healthy volunteers and 10 adults with type 2 diabetes and found low values throughout - 46.3 to 55.1 in healthy subjects, 43.8 to 53.0 in diabetic ones - with no significant postprandial glucose excursion. That removes the simple sugar objection. Gentilcore and colleagues (Journal of Clinical Endocrinology and Metabolism, 2006) supply the variable that matters instead: giving olive oil before a carbohydrate meal markedly slowed gastric emptying and delayed and flattened the glucose peak. Fat, not sugar content, governs how fast a carbohydrate load arrives. Internally, we parsed the Fruit and Vegetable column of all 201 recipes in the formulation database, extracted the exact date dose in grams for every recipe, split the database into the 86 that contain dates and the 115 that do not, binned the date set by dose, and correlated dose against calories, carbohydrate, fat, fiber, and Score.
Results
Dates appear in 86 of 201 recipes, the most common single item in the Fruit and Vegetable column. The median dose is 12.7g and the range runs from 4g to 50g. Recipes with dates average 383.7 kcal, 33.1g protein, 43.9g carbohydrate, 9.3g fat, 8.0g fiber, Score 14.87. Recipes without them average 368.5 kcal, 33.0g protein, 36.2g carbohydrate, 10.9g fat, 7.4g fiber, Score 15.06. Protein is untouched - 33.06 against 32.99, a difference of 0.07g. What moves is carbohydrate up 7.7g and fat down 1.5g. Inside the date set those two move as mirror images: dose against carbohydrate correlates at r = +0.231 and dose against fat at r = -0.231, while dose against calories is r = -0.057, effectively flat. The date is not adding calories to the shake. It is spending them, and it spends them on fat. The fiber consolation is small - dose against fiber correlates at only r = +0.136. Recipes at 20g of dates or more (n=21) average 46.7g carbohydrate, 8.5g fat, 8.3g fiber; recipes under 10g (n=26) average 42.9g carbohydrate, 10.0g fat, 7.8g fiber. Tripling the date dose buys 0.5g of fiber and costs 1.5g of fat, and it buys nothing in Score: dose against Score is r = -0.021. The endpoints make it visible. EI-W3-GUT-008-V1 (Soft Center) carries Dates 50g and lands at 382.9 kcal, 34.6g protein, 54.8g carbohydrate, 4.2g fat, 10.4g fiber, Score 13 - and it is labelled Light. EY-W3-GUT-008-V1 (Digestive Ease) carries Dates 32.5g at 385.7 kcal, 59.0g carbohydrate and 4.4g fat. Against them, WI-W1-VITAL-001-V1 (Radiant Recharge) uses Dates 4g and scores 19, the highest in the database, at 398.5 kcal, 52.6g carbohydrate, 8.5g fat, 8.2g fiber; WI-W1-VITAL-013-V1 (Spirited Rise) uses Dates 5g and scores 17 at 45.5g carbohydrate, 11.7g fat, 10.6g fiber. By Gentilcore's logic, a 54.8g carbohydrate shake carrying 4.2g of fat has nothing in it to slow the load down.
What Failed
The gut rationale, which is the reason most of the heavy doses exist. Dates get added to Gut goal recipes on the theory that they bring fiber to a formula that needs it. Across the 21 Gut goal recipes, the 11 containing dates average 8.57g fiber and 8.86g fat; the 10 without average 8.60g fiber and 8.68g fat. The two groups are indistinguishable. The fiber was already coming from the vegetables and the Body ingredient - EY-W3-GUT-007-V1 (Steady Gut) reaches 9.9g of fiber with no dates at all. Our second assumption failed too. We expected the low-date recipes to simply be lower-carbohydrate recipes, which would have made this a story about sugar. They are not: Radiant Recharge runs 52.6g of carbohydrate on 4g of dates. It bought its carbohydrate from mango and oat milk and kept its fat. The question was never how much sugar. It was what got moved out to make room.
What We Learned
A date at our doses is a sweetener with a fiber rounding error, not a fiber ingredient. At the 12.7g median it contributes roughly a gram of fiber and several times that in sugar. And because every MOMS recipe is built to a calorie target, a sweetener never arrives for free - it arrives at the expense of whatever is most calorically dense in the formula, which is always the fat. That is the ingredient the published work says actually governs how a carbohydrate load lands. Alkaabi's low glycemic indices are real, but they describe dates eaten as dates. They do not carry over to a 380-calorie shake that had its fat cut in half to make room for them.
What Changed at MOMS
Date dose is now capped at 15g per recipe, and any recipe above 10g of dates must hold at least 8g of fat, which we treat as the floor for meaningfully slowing a carbohydrate load. Dates are recorded as a sweetener, not as a fiber source - a Gut or Balance goal can no longer count date grams toward its fiber rationale, which has to come from vegetables, seeds, or the Body ingredient. The 21 recipes at 20g of dates or more are queued for reformulation, starting with Soft Center and Digestive Ease, where the fix is the same in both: pull 20g of dates, restore 5g of nut or seed, hold the calorie target. And we stopped reading a high fiber number as evidence that a recipe is working, since in the Gut set that number was identical with and without the ingredient we were crediting for it.
